Ingredientes
Para 4 personas:
2 bogavantes
¼ k. de cigalas
1 cebolla
½ pimiento rojo
1 pimiento verde
2 tomates
4 ó 5 dientes de ajo
1 puerro
4 tacitas de arroz
½ copa de brandy de Jerez
1 cucharadita de pimentón
Sal y pimienta al gusto
Para el caldo de pescado:
1 cabeza de rape
¼ de morralla o 1 pescadilla pequeña.
¼ de cangrejos
Arroz con bogavante.
Elaboración
Partir el bogavante por la mitad a lo largo y en rodajas, procurando aprovechar el jugo que suelte al cortar y rehogar en un poco de aceite de oliva. Retirar.
En el mismo aceite sofreír toda la verdura picada muy fina, con el pimentón. Añadir el arroz y remover.
Agregar el caldo de pescado (el triple de la cantidad de arroz), los bogavantes, el brandy, sal y pimienta y cocer.
A los diez minutos añadir las cigalas y dejar cocer 10 minutos más.
