Ingredientes
Para 4 personas:
700 g de patatas.
200 g de almejas.
4 huevos.
2 cebolletas.
3 dientes de ajo.
Aceite de oliva.
3 cucharadas de perejil fresco picado.
3 tazones de caldo de pescado (puede sustituirse por agua).
Patatas con almejas y huevos.
Elaboración
Pelar y picar los dientes de ajo y las cebolletas, ponerlas en una cazuela de fondo grueso y rehogarlas a fuego lento. Pelar, lavar y cortar las patatas en trozos pequeños e incorporarlas a la cazuela.
Rehogar las patatas removiendo con cuchara de madera. Espolvorear con perejil y cubrir con el caldo. Cocer a fuego lento. Mientras limpiar bien las almejas lavándolas varias veces.
Aclarar las almejas y ponerlas en cazuela de fondo grueso, añadir agua, tapar y calentar a fuego lento y rechazar las que queden cerradas. Colar el caldo y reservar.
Agregar las almejas con una sola concha y el caldo a las patatas, Dejar caer los huevos abiertos uno a uno. Tapar, retirar del fuego y dejar reposar hasta que las claras estén cuajadas.
